Wanna share my umbrella?


I read one of Holly's thoughts today and I was inspired to write this:

Rain..O blessed Rain…
It refreshes our soul, it washes away our tears.
It reminds us of home when it’s too cold to play outside
It reminds us of hot cocoa and pajamas and warm blankets
But there are times it reminds you how solitary you are..
Looking out the window, watching people go by …
Sometimes alone…sometimes two emerged under one umbrella
There will be a point you will get out of your safe haven and brave the
Storm, walk in the cold, wind blowing your face…getting soaked to the skin. Then you will realized None of us meant to walk through the rain alone.

Ginataang Santol Recipe

This Recipe was handed down to me by a Bicolana friend, Manay Lina way back when I still in Subic Bay, Philippines circa 1990's. I was skeptical at first because the Santol fruits was eaten by us raw pairing it with salt or sauteed Shrimp paste. After tasting this delicacy I was hooked and became one of my favorite side dish.  This is pretty good served with Fried fish.

Here's What you need:
4 to 5 lbs of Santol ( I bought mine frozen from Seafood City
2 Coconut milk in can
1 Coconut cream
1 lb pork belly (diced)
Shrimp Paste 
Siling Haba or JalapeƱos ( I used red pepper since it was the only pepper at hand)
Minced Garlic
Sliced Onion


Procedure

Peel santol. Cut in halves, remove the seeds and set aside. Dice pulp. Sprinkle about 1/2 teaspoon salt over the diced santol, mix then pick up handfuls of the diced pulp and squeeze to remove some of the juice.

In a deep pan combine pork, coconut milk, shrimp paste, onions and garlic, stirring every now and then to avoid curdling. When the mixture boils, add in santol and correct saltiness, add salt or more shrimp paste as needed. Continue stirring slowly until the mixture boils until the liquid was reduced in half. Add in the pepper and let the mix simmer until the coco milk is thick and the oil started to appear.

Served hot or cold with Steamed white rice and Fried Fish.

I love the look you'd get when I'd touch your cheek and smile at you.
I love how you thought you were so stealth with your mood changes when you really can't hide them from me.
I love all your flaws, it makes you special.

HOW DO YOU EAT YOUR OREO COOKIES?


 How do you eat your Oreo cookies? It's funny that different people eats it in different ways..please read on!!

DO NOT STAND AT MY GRAVE AND WEEP

I am listening to Libera tonight and I’ve heard this song for the first time, just the title itself touched me deeply…it inspired me to compose a poem with the same title.  Do not get alarmed though ha-ha-ha..I am in the best of everything, I just love writing morbid thoughts as my way of extracting negativity from the inside out…here goes:


DO NOT STAND IN MY GRAVE AND WEEP

God gave you life go and celebrate it..
God gave you health do not waste it.
Smile and face the world, shoulder straight,
Your castle is there, your dreams await..


Sing no sad song for me, I won’t hear the melodies
But rather dance, be happy coz no more agonies…
All was left of me are the memories….
pick the good ones, not those tinge with worries.


Plant no flowers in my grave, it’s useless…
Their beauty I won’t see, the smell I won’t care less.
But I ask you to plant me a big, big tree..
Branches reaching to the heavens, leaves swaying free..


Do not stand at my grave and weep..
Go home, get dressed and pray before you sleep.
because tomorrow is another day, my sweet..
Maybe it would be the day that you and I again shall meet.
